Who knew a little dehydration could lead to so much character? From bone-dry Amarone to lusciously sweet botrytized beauties and sun-dried dessert wines, grape drying is a trick winemakers around the world have been using for centuries. We’ll explore the techniques, traditions, and gloriously diverse styles that emerge when grapes lose a little water and gain a whole lot of personality. Raisins have never been this sophisticated.
